– 1 1/2 pounds boneless, skinless chicken breasts (cut into bite-sized pieces)
– 1/4 cup cornstarch
– 1/4 cup vegetable oil
– 1 green bell pepper (cut into 1-inch pieces)
– 1 red bell pepper (cut into 1-inch pieces)
– 1 small onion (cut into wedges)
– 1/2 cup pineapple chunks (fresh or canned)
*Sauce:*
– 3/4 cup pineapple juice (reserved from canned pineapple, if using)
– 1/3 cup brown sugar
– 1/4 cup apple cider vinegar
– 1/4 cup ketchup
– 2 tablespoons soy sauce
– 2 cloves garlic (minced)
