Scrumptious Ginger Walnut Cake Recipe: A Family-Favorite Dessert for All Occasions

Hello, my lovely readers! With June in full swing, I wanted to share one of my favorite dessert recipes that is always a hit with my kids. It’s a scrumptious Ginger Walnut Cake that never fails to put a smile on their faces. This cake has a special place in my heart, as it reminds me of the time when Emily, our talented pianist, had her first big recital.

I remember how nervous she was, practicing for hours on end to perfect her performance. On the day of the recital, she played beautifully and we were all so proud of her. To celebrate her achievement, I decided to whip up this delightful cake as a special treat. The combination of ginger and walnuts was an instant hit with Emily and our entire family.

This Ginger Walnut Cake is perfect for any occasion, whether it’s a family gathering or just a simple dessert after dinner. The warm flavors of ginger and the crunchiness of walnuts create a delightful texture that everyone will love. Plus, it’s incredibly easy to make! So, without further ado, here’s my recipe for this delectable dessert.

Ginger Walnut Cake

Ingredients:
– 2 cups all-purpose flour
– 1 1/2 teaspoons baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 2 teaspoons ground ginger
– 1 teaspoon cinnamon
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1/2 cup packed light brown sugar
– 3 large eggs
– 1/4 cup molasses
– 1 teaspoon vanilla extract
– 1 cup buttermilk
– 1 cup chopped walnuts

Instructions:
1. Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch round cake pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ginger, and cinnamon. Set aside.
3. In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the molasses and vanilla extract.
4. Gradually add the flour mixture to the butter mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix until just combined. Fold in the chopped walnuts.
5. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
6. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Serve this delightful Ginger Walnut Cake with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special treat! I hope you enjoy this recipe as much as my family does. Happy baking, my friends!

Love always,
Lisa
