Welcome to my blog! Today I’m going to share a quick and easy lunch recipe that I like to make when I’m in the mood for something a bit more substantial. This one is a great way to use up whatever leftovers you have in the fridge.
This recipe is a tasty combination of flavors and textures. I like to start with cooked quinoa as the base, then add in cooked chicken, black beans, corn, bell peppers, and diced tomatoes. I also like to add in a spoonful of salsa for a bit of heat. Then I finish it off with a sprinkle of cheese and some freshly chopped cilantro.
Here’s the recipe:
Ingredients:
-1 cup cooked quinoa
-1/2 cup cooked chicken, diced
-1/2 cup black beans, rinsed and drained
-1/2 cup corn
-1/2 red bell pepper, diced
-1/2 cup diced tomatoes
-1 tablespoon salsa
-1/4 cup shredded cheese
-1 tablespoon freshly chopped cilantro
Instructions:
1. Heat a large skillet over medium heat.
2. Add the cooked quinoa, chicken, black beans, corn, bell pepper, and tomatoes. Cook for 5 minutes, or until heated through.
3. Stir in the salsa and cook for an additional minute.
4. Sprinkle with the cheese and cilantro and serve warm. Enjoy!
