Welcome to my blog! Today I’m here to share a delicious and easy one-pot dinner recipe that’s perfect for busy weeknights. This One-Pot Italian Penne is a family favorite and it’s ready in just 20 minutes!
This recipe is a great way to use up whatever is in your fridge or pantry. Start with some penne pasta and add in some cooked Italian sausage, diced tomatoes, and your choice of vegetables. I like to use bell peppers, mushrooms, and spinach, but you can use any combination that you like. Then finish it off with some grated Parmesan cheese and a sprinkle of freshly chopped parsley.
Here’s the recipe:
Ingredients:
-1 pound penne pasta
-1 pound cooked Italian sausage, diced
-1 (14 oz.) can diced tomatoes
-1 red bell pepper, diced
-1/2 cup mushrooms, sliced
-2 cups baby spinach
-3 cloves garlic, minced
-1/4 teaspoon red pepper flakes
-1 teaspoon Italian seasoning
-1/4 cup grated Parmesan cheese
-2 tablespoons freshly chopped parsley
Instructions:
1. In a large pot, bring 4 cups of water to a boil. Add the penne pasta and cook for 8-10 minutes, or until al dente. Drain and set aside.
2. Heat a large skillet over medium heat. Add the sausage and cook for 5 minutes, or until lightly browned.
3. Add the diced tomatoes, bell pepper, mushrooms, spinach, garlic, red pepper flakes, and Italian seasoning. Cook for an additional 5 minutes, or until the vegetables are tender.
4. Add the cooked pasta to the skillet and toss to combine. Sprinkle with the Parmesan cheese and parsley and serve warm. Enjoy!
