Hello, my lovely readers! Today, I wanted to share a quick and easy lunch recipe that I whipped up in just 15 minutes, using only the ingredients I had in my fridge. It’s perfect for those busy days when you’re trying to juggle household chores, kids’ activities, and, of course, your own self-care.
This recipe actually came about when my dear Emily came home from school one day feeling a bit under the weather. She had been rehearsing for her upcoming piano recital, and I could tell she was starting to feel the pressure. I wanted to create something comforting and nutritious that would lift her spirits and help her regain her energy – and that’s how this scrumptious Pepper and Noodle Stir Fry was born!
In our household, we love the versatility of noodles. They’re a fantastic canvas for all sorts of delicious flavors, and they can be dressed up or down depending on what you have in your pantry. For this dish, I used some leftover spaghetti noodles, but feel free to use any type of noodles you have on hand. The key to this recipe is the colorful mix of bell peppers, which not only add a vibrant touch but also pack a healthy dose of vitamins.
Pepper and Noodle Stir Fry (serves 2)
Ingredients:
– 4 oz cooked spaghetti noodles (or any type of noodles)
– 2 tbsp olive oil
– 1/2 onion, thinly sliced
– 1 clove garlic, minced
– 1 red bell pepper, thinly sliced
– 1 yellow bell pepper, thinly sliced
– 1 green bell pepper, thinly sliced
– 2 tbsp soy sauce
– 1 tbsp oyster sauce
– Salt and pepper, to taste
– Optional toppings: chopped green onions, toasted sesame seeds
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook until fragrant and softened, about 3 minutes.
2. Add the sliced bell peppers to the skillet, and cook for an additional 5 minutes, or until the peppers have softened but still retain a bit of crunch.
3. Add the cooked noodles to the skillet, along with the soy sauce and oyster sauce. Stir well to combine and ensure the noodles are heated through.
4. Season with salt and pepper to taste, and remove from heat.
5. To serve, divide the stir fry between two plates, and garnish with chopped green onions and toasted sesame seeds, if desired.
I hope you enjoy this quick and easy lunchtime recipe as much as we do! It’s become a favorite in our family, and it always reminds me of how important it is to take a step back and focus on what truly matters – nurturing our loved ones and ourselves.
Wishing you all a beautiful May filled with warm memories and delicious meals!
