Breakfast Skillet: Crispy Potatoes, Bacon, and Egg

This breakfast skillet is a hearty and flavorful combination of potatoes, bacon, onions, and bell peppers. I like to add in some garlic for an extra punch of flavor. Then I top it off with some shredded cheese and a few eggs for a protein-packed breakfast.

Here’s the recipe:


-2 tablespoons olive oil
-1 pound small red potatoes, diced
-1/2 pound bacon, diced
-1/2 cup onion, diced
-1/2 red bell pepper, diced
-2 cloves garlic, minced
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1 cup shredded cheese
-4 large eggs
-Chopped fresh parsley (optional)


1. Heat the olive oil in a large skillet over medium heat. Add the potatoes and bacon and cook until the potatoes are golden and the bacon is crispy.

2. Add the onion, bell pepper, garlic, salt, and black pepper and cook for an additional 2 minutes.

3. Sprinkle with the cheese and cook for an additional minute.

4. Create four small wells in the skillet and crack an egg into each one. Cover with a lid and cook for 6-7 minutes, or until the eggs are cooked through.

5. Serve with chopped fresh parsley (optional). Enjoy!
