Chocolate Chip Pancake Muffins
Ingredients:
-1 ¼ cups all-purpose flour
-2 tablespoons sugar
-2 tablespoons baking powder
-½ teaspoon salt
-1 cup milk
-1 egg
-2 tablespoons butter, melted
-1/3 cup mini chocolate chips
Instructions:
1. Preheat oven to 375°F. Grease 12 muffin cups with nonstick cooking spray or line with paper liners.
2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, egg, and melted butter.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the mini chocolate chips.
4. Divide the batter evenly among the prepared muffin cups. Bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
