My son Nick loves starting off his day with a big, hearty breakfast. One of his favorite recipes is a millet bowl with yogurt, berries, and toasted nuts. It’s an easy, delicious meal that I can whip up in minutes and it keeps him full until lunchtime.
This recipe is packed with healthy ingredients and can be tweaked to suit your tastes. You can switch out the millet for oatmeal or quinoa, add different fruits or nuts, or even throw in some dark chocolate chips if you’re feeling naughty!
Ingredients:
-1/2 cup millet
-1 cup almond milk
-1/2 cup plain Greek yogurt
-1/4 cup fresh berries (blueberries, strawberries, etc.)
-2 tablespoons toasted nuts (walnuts, pecans, almonds, etc.)
-Honey, to taste
Instructions:
1. In a medium saucepan, bring the millet and almond milk to a simmer over medium heat and cook for 20 minutes, stirring occasionally.
2. When the millet is cooked, remove from heat and stir in the Greek yogurt.
3. Divide the millet into two bowls and top with the fresh berries and toasted nuts. Drizzle with honey, if desired. Enjoy!
