Lemon Cake Recipe: A Sweet Family Tradition

Today I’m making a delicious lemon cake with my kids! It’s a recipe that we all love, and it always brings back fond memories of when my kids were little.

My son Jake was particularly fond of this recipe when he was younger. He would peer over my shoulder while I mixed the ingredients and ask me questions about what I was doing. His curiosity was so endearing and it was precious to watch him learn about baking.

This lemon cake is a simple recipe that you can make in no time. It’s moist and flavorful, and the lemon zest adds a nice tartness to the sweet cake. Here’s what you’ll need:

Ingredients:

– 2 1/2 cups all-purpose flour
– 1 teaspoon baking powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 3/4 cup butter, softened
– 1 cup granulated sugar
– 2 eggs
– 2 tablespoons lemon zest
– 1/2 cup Greek yogurt
– 1/2 cup freshly squeezed lemon juice
– 1/2 cup milk

Instructions:

1. Preheat oven to 350 degrees F. Grease a 9-inch cake pan and set aside.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, until combined.
4. Stir in lemon zest, yogurt, lemon juice, and milk until combined. Slowly add in the dry ingredients and mix until just combined.
5. Pour batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
6. Serve with a dollop of whipped cream and a sprinkle of lemon zest. Enjoy!
