Easy Cashew Chicken Recipe: A Delicious Weeknight Meal for the Whole Family

Today, I’m sharing an easy dinner recipe that’s a staple in our house: Cashew Chicken. This dish has been a favorite of my son Jake ever since he was little. He loves the sweet and savory combination of the cashews with the chicken.

This is a great meal for busy weeknights when you don’t have a lot of time to spend in the kitchen. It comes together quickly and can easily be tailored to whatever ingredients you have on hand. Plus, it has a nice balance of protein, carbs, and veggies!

Here’s what you’ll need:

-2 boneless, skinless chicken breasts, cut into cubes
-1/2 cup of roasted cashews
-1 red bell pepper, diced
-2 cloves of garlic, minced
-1/4 cup of soy sauce
-1 tablespoon of brown sugar
-1 teaspoon of sesame oil
-2 tablespoons of olive oil

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the chicken cubes and cook for about 5 minutes until golden brown.

3. Add the bell pepper, garlic, cashews, soy sauce, brown sugar, and sesame oil. Stir everything together until well combined.

4. Cover the skillet and let the chicken and vegetables simmer for about 10 minutes until cooked through.

5. Serve with cooked rice or noodles and enjoy!
