Happy March, everyone! As we’re slowly transitioning from winter to spring, I find myself craving lighter, fresher breakfast options. One morning, while watching the snow melt outside, I decided to whip up a delightful and nutritious breakfast bowl that would be perfect for the whole family. This recipe was inspired by my youngest son, Nick. He’s quite the cookie monster, but I always try to find healthier alternatives that still satisfy his sweet tooth.
I remember one Saturday morning when Nick came running into the kitchen with his Lego creation in hand, eager to show me what he’d built. His excitement was contagious, and it got me thinking about how I could create a fun and interactive breakfast that would fuel his creativity and love for building. That’s when I came up with the idea for this Fruit and Yogurt Breakfast Bowl with Cashew Crumble!
The cashew crumble adds a lovely crunch to the dish, making it a perfect contrast to the soft fruit and creamy yogurt. Plus, cashews are a healthy source of protein, fats, and vitamins – a great way to start the day! And don’t worry, it’s not too sweet – the honey and cinnamon in the crumble add just the right amount of natural sweetness.
So, without further ado, here’s my recipe for a Fruit and Yogurt Breakfast Bowl with Cashew Crumble. Enjoy!
Fruit and Yogurt Breakfast Bowl with Cashew Crumble
Ingredients:
– 2 cups plain Greek yogurt
– 1/2 cup fresh strawberries, sliced
– 1/2 cup fresh blueberries
– 1/2 cup fresh raspberries
– 1/2 cup fresh blackberries
– 1/2 cup cashews
– 2 tbsp honey
– 1 tbsp coconut oil
– 1/4 tsp cinnamon
– A pinch of salt
Instructions:
1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
2. In a medium mixing bowl, combine cashews, honey, coconut oil, cinnamon, and a pinch of salt. Mix until the cashews are evenly coated.
3. Spread the cashew mixture onto the prepared baking sheet in a single layer.
4. Bake for 10-12 minutes until golden brown and fragrant. Be sure to keep an eye on them as they can burn quickly! Remove from the oven and let them cool completely. They will become nice and crunchy as they cool.
5. To assemble the breakfast bowls, divide the Greek yogurt among four bowls.
6. Arrange the fresh berries on top of the yogurt in each bowl.
7. Sprinkle each bowl generously with your cooled cashew crumble.
8. Serve immediately and enjoy watching your family dig into this healthy and delicious breakfast!
This Fruit and Yogurt Breakfast Bowl with Cashew Crumble has become a staple in our home. It’s a great way to encourage healthy eating while still keeping things fun and interactive for the kids. Plus, who doesn’t love starting their day with a beautiful and colorful dish? Give it a try and let me know what you think!
